carrot cake

The other day I made carrot cake, and I notice that some of the carrots in the cake turned green. Why did this happen? The recipe has flour, sugar, baking soda, and cinnamon sifted together. Then you add eggs and oil and the carrots. I don't think anyone got sick but why did this happen, it is not very inviting.
