Fudge Failure!

I need some help in figuring out why my fudge turns out crumbly.
The recipe calls for boiling the syrup for 14 minutes over medium heat, stirring occasionally. The syrup consists of sugar and evaporated milk. I tend to stir it more often because it can scorch.
After the syrup has boiled, it is poured over chocolate chips and butter and then beaten for 10 minutes.
I have occasional successes with this recipe, but more often than not, it turns out crumbly. Any idea of what I am doing wrong?
