sea foam

Hi,

I'm trying to make my Mom's old sea foam recipe and the same recipe is posted on this site. The Settlement cookbook says to bring the sugar and corn syrup and water to 265. I've done that exactly and beat it into the beaten eggs whites. It's not setting correctly. You have to beat it until you see it kind of dull slightly, otherwise when you drop it will spread out to much. Instead of a lighter nice texture it has more of a creamy almost taffy like texture. I know that Mom and I have had this problem before and it seems to work one time and not the next??? Any idea what could be causing this? thanks for any help you can offer. Tammy
