Licorice Caramels Recipe

I made Licorice caramels for the first time. I let it cool in about 40 degrees for several days. When I started to cut it up and roll it in wax paper wrappers, it got kind of soft. Do I need to cook the next batch a little longer? How much? What degree on the candy thermometer? We live at an altitude of 4500 ft.
