I have tried covering fresh ginger pieces with sherry and storing it in a covered glass jar in the fridge as well as wrapping it well and storing in the freezer. The sherry method worked well (if I ever find the frozen ginger again I'll find out if the freezer method worked!) but am out of sherry. Would vodka work? Thanks.
