I have several recipes that call for using a tube pan. My problem with these are that I can't get the cake turned out onto a plate without it tearing up. Is there a secret to getting the cakes out? I have loosened the cake around the tube and removed the side of the cake pan. But there my cheesecake sets at about 2 inches high and the tube is about 6 inches high.
