In Response To: Need a Greek cook for advice and help (Bill Esterline)

Here are a couple of websites which may help you-- http://www.greek-recipe.com/ and http://www.eatgreektonight.com/ as a start. I usually do a "mezze" or collection of small dishes including "keftedes" or Greek meatballs with mint, "tsatsiki" or a dripped yoghurt (to remove much of the water) spread which contains garlic and grated cucumber (which replaces the water) and salt, "taramasalata" fish roe spread, shrimp "uvetsia" or shrimp with feta, garlic and tomatoes, "moussaka" or eggplant and ground meat layers topped with bechamel and baked as you would a lasagna and sometimes a "pastitsio" which is a layered pasta dish with a cinnamon/onion flavored filling, also topped with a bechamel sauce and baked. A Greek "horiatiko" or peasant salad which does NOT contain lettuce but rather a combination of tomatoes, green peppers, cucumber, feta cheese, scallions etc. and tossed with a vinagrette dressing and I finish with a "rizogalo" or Greek rice pudding--simply made on top of thw stove using short grain rice, lemon zest, whole milk, sugar and which is boiled and stirred until creamy (about 20 minutes), then is chilled a topped with cinnamon-- yummm!
