omitting gelatin in cake batter recipe?

I recently came upon a strawberry cake recipe that looks fabulous (http://www.fineliving.com/fine/entertaining/article/0,2498,FINE_22197_5487938,00.html), but it calls for strawberry Jell-O, which i can't eat. what would happen to the cake is i totally omitted the gelatin. or, is there something i could substitute it for such as agar agar?
