I'm a little bit new to the world of premium chef knives... I used the cutco I inherited from my mom when I went to school, and last year I bought a knife from Wusthoff which I thought was pretty great. But my friend gave me this chef knife for my birthday a couple days ago and it is awesome! It's a Santoku (sp?) and it handles like a dream. On top of that it's gorgeous. It's from New West Knifeworks. Anybody ever heard of it? Also, can someone refer me to info about the different techniques one uses with a Santoku as opposed to a regular 8' chef knife?
