knife sharpening for the busy and inexperienced

    Posted By: kate

I have finally gotten high quality German knives, but I have no experience sharpening knives. I'd rather not make a trip to a professional every few weeks--I have enough errands as is, but what's the point of having nice knives if they're not really sharp. Advice?

My knives are stainless steel by JA Henckels.

Henckels's website promotes a Twin Stone, which I wouldn't know how to use, and would be scared to try without a demonstration.

I'm willing to show up to a store or find an expert for a one-time lesson. But who to ask? And would a one-time lesson prep me enough?

Is their a piece of equipment that's foolproof and does the job well without damage to the blade?

Thank you,
Kate, NYC
