sevenup and lb cakes

From time to time when I bake a sevenup/lb cake the inside is cooked well in some places and the middle may be a little too moist. I was told the cake may have sweat which causes the inside to appear as though it may not have been cooked long enough. Well the other day I baked a sevenup cake the cake did sweat however the cake was very light and flaky it was perfect.
